My husband's aunt has made this delicious Chex mix recipe as long as I have been around and it's always a hit! I made it this week for my co-workers and I got a lot of positive feedback so I figured I would share it with you guys! It's actually pretty easy, so it's perfect for parties and gatherings. This recipe makes 1 container so feel free to double (or triple) it! I tripled it to make about 50 individual bags for school.
Disclaimer: one of my coworkers thought that because it came from me that it was healthy, which cracked me up! This is NOT a WW friendly recipe!! But sometimes, that's ok :)
1 box Chex Mix (I used generic from Aldi)
3 tbsp light corn syrup
1 cup mixed nuts (dang, nuts are expensive!! I had no idea LOL)
1 stick butter
1 cup brown sugar
As much chocolate as you want! I used 2 full bags of Christmas M&Ms!
I was able to find everything I needed at Aldi, but I did borrow the syrup from my mom!
1) Preheat oven to 300 degrees
2) Spray baking pan with spray oil
3) Mix cereal with nuts in a large bowl 4) Heat brown sugar, butter and corn syrup on the stove until it is mixed together. Stir constantly until it foams/bubbles. 5) Pour syrup over cereal/nut mix and toss to coat. 6) Put into baking pan and bake for 10 minutes. Stir occasionally to keep it from sticking together. 7) Remove from oven and let it cool COMPLETELY before adding the chocolate.
9) Stir occasionally when cooling.
