Easy chicken salad

Two recipes up in one week? Who am I, you guys? I don't know if it will happen again so don't get used to it haha! This chicken salad recipe is super tasty and healthier twist on the chicken salad we all know and love. Grab your Crockpot and whip some up today! This will need some time to cool in the fridge so allow for that.

Servings: 5 at 1 cup each

WW points: 1SP per serving


1 package celery, diced

1 yellow onion, diced

1 tbsp light mayo (points will vary by brand so double check)

2.5 tbsp plain, nonfat Greek yogurt

Black pepper

Garlic powder Celery salt

1 cup reduced sodium chicken broth

1 bag frozen chicken breasts (3lb) or you can use fresh

Montreal chicken seasoning (optional)

Green onions (optional)


1) Turn Crockpot on

2) Add chicken broth, chicken, garlic powder, celery salt and chicken seasoning

3) Cook on low for 5-6 hours until chicken can be shredded with a fork

4) Drain all juices

5) Let chicken cool

6) Add mayo, yogurt, pepper, onion and celery

7) Mix and put in fridge for at least 2-3 hours until all flavors mix

8) In an air-tight container this should stay between 3-4 days

* I like to serve with crackers, but it's great as a sandwich or wrap or just grab a fork and eat it out of the bowl!
