Strawberry Icebox Cake



My family requested this dessert for Thanksgiving and while it's not REALLY healthy, it is 8SP per serving when cut into 12 pieces. The original recipe is 13SP per serving, but I lightened it up. This dessert is super easy, TASTY and you can (and should) make it ahead. For the best taste, make it 24 hours ahead of time and leave it in the fridge.

Ingredients

Strawberries-I use 1 package, but you can use more if you want

1 container Fat Free Cool Whip thawed

1 box plain Graham Crackers


I had 2 containers of Cool Whip because 1 was 1/2 empty

Directions

Thaw Cool Whip so it is spreadable

Line bottom of 11 x 7 baking dish with 1 layer of crackers. Depending on the size of your pan, you may have to break some crackers to fill in gaps.

Spread 1 thick layer of Cool Whip over crackers. Make sure to really lay on the Cool Whip or it might taste dry when you eat it.

Lay cut strawberries on top

Repeat for 2 more layers

Wrap with foil or cling wrap and place in fridge for 24 hours

*Sometimes I add shaved chocolate to the top layer, but it will add points.


*When you take it out of the fridge, cut into 12 pieces. It will be soft and delicious! Let me know what you think!
