Turkey Meatloaf
It's been quite awhile since I've posted and life has gotten away from me! My husband had a job change, I started working another Weight Watchers meeting and it's just been so busy! Don't worry though, today's post is worth the wait! This turkey meatloaf is healthy, quick and easy to make so you can't go wrong! I made it yesterday for dinner for 3 nights this week and I can't wait to dig in!

Makes 3 servings (based on the pan I used) 3 SP per serving
Ingredients

2 eggs
1 lb ground turkey breast
10 Ritz crackers
Heinz reduced sugar ketchup
Stubbs BBQ sauce
Dried onion (or the real thing if you prefer)
Parsley
Garlic powder
Spray oil
Worcester sauce (not pictured)
Directions


Preheat oven to 375
Mix 2 eggs, 1g BBQ sauce, 2 tbsp ketchup, 3 tbsp Worcester sauce in bowl
Add turkey breast to bowl and mix around by hand or with spatula. Be sure to mix WELL!
Crumble up crackers and add to the mixture
Add a few shakes of each seasoning (I never measure)
Spray pan with oil
Add mixture to pan
Bake for 1 hour and 15 minutes
Cut into 3 equal servings
To store, cover and place in fridge. Note: the turkey may still look pink-ish due to the ketchup so you can use a meat thermometer to be sure it is cooked properly, but it should be fine if you followed the directions.
